4th of July Whoopie Pies

Last year, I posted this delicious 4th of July Wactivity on July 3rd. At the time, there were only about 150 followers of this page. I’m guessing that exactly 0 of them rushed out and got to baking before the big holiday. So now, one year wiser, I’m giving the nearly 425 of you a little lead time with this holiday-sensitive Wactivity.

Weekly Wednesday WhyNot Wactivity: 4th of July Whoopie Pies!

Normally, I am a bake from scratch kinda gal, but when something is this easy, this fun, this kid & adult-friendly, and this good – I say, WhyNot!?!

 Here’s whatcha do:

 Preheat oven to 350 degrees

 Line baking sheets with parchment paper (if you can, do 4…  you’ll need that many – and if you’re working with lil bakers it’s  good cutting practice!)

 1 Box Cake Mix, your favorite kind (we did white and also red  velvet for 4th of July effect)

 1 egg

 1/4 cup oil

 1/4 cup buttermilk

Do the appropriate pouring, cracking, and dumping to get all the above into a bowl.

Use an electric mixer to beat those ingredients together (NOTE: do not follow the directions on the box – just add this one egg, oil + buttermilk). It’ll be pretty thick when you are done.

Now use an actual teaspoon measuring spoon to spoon out small rounded teaspoons. I know, I know, sounds a bit tedious and precise, but you’ll wanna do this to get evenly sized cookies — perfect for tops and bottoms!

Cool completely (this takes patience but it really matters otherwise your frosting gets so melty it squooges right out of your pie…).

Assemble with frosting in the middle.

They are delicious and amazing right now! But to really add some fireworks and 4th of July fantabulousness, roll the outsides in red and blue sprinkles!
